چکیده
background probiotics have been used for dairy products such as yogurt and yogurt drinks, however cholesterol content and lactose intolerance are important drawbacks. recently, consumption of non-dairy probiotic food especially for probiotic drink products has been intensified. objectives this research was conducted to determine the suitability of peach as a raw material for producing probiotic peach juice by lactic acid bacteria. materials and methods peach juice was inoculated with a 24-hour-old lactic acid bacteria culture and incubated at 30°c. changes in the ph, titratable acidity, sugar content, and viable cell counts during fermentation under controlled conditions were monitored. viability of lactic acid bacteria cultures in fermented peach juice was also measured during four weeks of cold storage at 4°c. results lactobacillus delbrueckii grew well in peach juice, reached nearly 10 × 109 cfu/ml, after 48 hours of fermentation at 30 °c and was capable of more sugar consumption, ph inclination and production of lactic acid during fermentation. after four weeks of cold storage at 4 °c, the viable cell counts of l. delbrueckii were 1.72 × 107 cfu/ml, in fermented peach juice. lactobacillus casei could not survive in fermented fruit juice after the cold storage. conclusions in conclusion, l. delbrueckii in peach juice was appropriate to produce a probiotic beverage. therefore, this juice can serve as a healthy beverage for vegetarians and lactose-allergic consumers.

Producing Quality Grape Juice
INTRODUCTION The first grape juice known to be processed in the United States was produced by Dr. Thomas B. Welch, a New Jersey dentist, in 1869 with the newly developed pasteurization process. Assisted by his wife and their 17-year-old son, Charles, he extracted juice from 18 kg (40 lb) of grapes (Vitis labrusca L.). They filtered and bottled the juice and pasteurized it in hot water to kill t...
متن کاملChemical, Sensory and Survival Properties of Lactobacillus Plantarum in Peach Juice
Background Nowadays, the consumption of probiotic food products has become common. Since the consumption of some dairy products is not allowed for some people, there is a need for some alternative foods. Fruits are suitable for the production of probiotic drinks due to the lack of any adverse effects. Objective This study was aimed to investigate the chemical and sensory properties and the sur...
متن کاملProbiotic Properties of Exopolysaccharide-Producing Lactobacillus Strains Isolated from Tempoyak.
Tempoyak is a functional Malaysian food (an acid-fermented condiment) which is produced from the pulp of the durian (Durio zibethinus) fruit. The current study aimed to isolate and identify potential exopolysaccharide (EPS)-producing Lactobacillus strains from tempoyak for potential use as probiotics. Seven isolates (DUR2, DUR4, DUR5, DUR8, DUR12, DUR18, and DUR20) out of 44 were able to produc...
متن کاملProbiotic effects of beta-glucuronidase on the peach-potato aphid Myzus persicae (Aphididae).
beta-glucuronidase (GUS) is a reporter protein commonly expressed in transgenic plants allowing the visualization of the transformed individuals. In our recent work, we showed that consumption of transformed potato plants expressing this GUS enzyme improves performance of the phloem feeding aphid Myzus persicae. Those results led us to the conclusion that the expression of GUS in potato plants ...
